Degustazione: Giallo paglierino intenso e brillante con riflessi dorati. Al naso offre un bouquet ampio e complesso con sentori eleganti e persistenti di ananas, banana, fiori bianchi e agrumi mentre in bocca è gradevolmente fruttato, secco, persistente, con un buon corpo ed un ottimo equilibrio.

NUN RELAIS The Relais Nun is located in the spiritual heart of Assisi, in the highest part of the historical centre with magnificent views of the both the Rocca Maggiore and Minore on the soft contours of Mount Subasio. It is an exclusive 5 star Relais that came about from the careful restoration of the ancient monastery of Saint Catherine, which was originally constructed in 1275 for a community of Benedictine nuns. Its 18 suites are situated a short distance from the center of Saint Francis’ city in a quiet natural setting. Our love for history has ensured that this ancient place has preserved the details of the mediaeval monastery, designed along the lines of Benedictine rules calling for a “human city” for individuals. Each ample room is unique, with niches, frescoes, cross-vaulted ceilings and yet with all the modern comforts of technology which pleasantly surround the body and the mind with simple elegant formality in complete harmony with the spiritual nature of the ancient stones. The clean light hues and the diaphanous consistency of the furniture are an uninterrupted dialogue between the complicity of the past and the lightness of modern design. NUN SPA MUSEUM Nestled in an intimate and evocative setting, the Nun spa seems like a true and proper private museum offering guests the full impact of its arcane beauty. When the Saint Catherine Convent, where the Relais now stands, was being renovated, many archaeological features were discovered in the lower levels of the site and these have been very knowledgeably used in the design of the wellness centre to create a truly unique ambience: six limestone pillars are reflected in the water of Nun’s thermal baths, making it an even more magical and powerfully evocative place. The pillars, each one constructed out of twelve ashlar-work blocks held together by the synergy of force and balance, reveal a Roman amphitheatre that once sat at the feet of Mount Subasio. From the swimming pool you can also admire the important, smoothed, ancient, pink limestone steps at the top of which a rectangular podium once rose, the work of ancient Roman craftsmen in 1st century AC, and the entrance to a temple dedicated to the water. Connected to the structure are two moulded limestone vats so flat that they barely contain a veil of water, further evidence of the archaic sacredness of this place. Inside the Nun thermal spa there are also two perfectly preserved Roman cisterns with vaulted ceilings where the massage room and the hammam (Turkish bath) are now located. There is most certainly a connection between these magical places and the adjacent Perlasio fountain, a mythical spring of miraculous healing water and a popular place of pilgrimage in times long past. Nun worked hard to return these places to the water and its cult, to an intimate dialogue with everything to which it is now connected. NUN RESTAURANT Umbria’s roots lie deep in its ancient farming culture. Umbria is a land famous for strong aromas, for the simplicity of its cuisine and the genuine goodness of its flavours. The exquisite dishes created by our Chef speak of this part of Umbria’s history, using colour and aroma to interpret the multi-faceted aspects this area has to offer. He uses only vegetable oils to prepare his dishes, steaming or preparing them at low temperatures, and takes great care to seek out the very highest quality Umbrian extra-virgin olive oils. His choice of vegetables is selected from among small local growers and according to season to ensure extraordinary freshness. The meat he procures comes from the finest farms in the area. The Chef, and his staff, bake their own bread, roll their own pasta, and make all of the desserts and ice cream every day from scratch. Guests at the Nun Restaurant can enjoy their meals al fresco, in the light and simple ambience of the cloister alongside the Santa Caterina church, as they admire a splendid view of the Rocca Minore.
